It is a legal requirement that food businesses must carry out an analysis of the processes through which foods pass, and to identify any steps in the process which are critical to food safety. These critical steps must be controlled by suitable conditions to ensure the safety of the food, and that these controls are demonstrable and appropriately recorded.
