Meat inspection

A comprehensive meat inspection service is provided at London Central Markets on an agency basis for the national Meat Hygiene Service to ensure both that unfit or unsound meat is not sold to the public and to ensure that all meat is handled and stored under hygienic conditions on the Market. Regular inspections of the hygiene of vehicles carrying meat to and from the Market are also undertaken.

The provisions of the Health and Safety at Work, Etc. Act 1974 and allied legislation are enforced within the Market in close liaison with the Clerk and Superintendent and the Health & Safety Executive, through regular inspections and the investigation of accidents and dangerous occurrences.

Formal and informal training in meat inspection and meat hygiene is provided for students, market traders, market workers and others involved in the meat trade.
